Festive chia pudding breakfast

I like chia pudding for breakfast or a snack because it is filling and easy to make. I found this Gingerbread Chia Pudding recipe on Pinterest and had to try it. I followed the recipe exactly and found it tasted too much like cloves and molasses so I changed the measurements for the spices and sugar. If you find it needs more sugar or spice I recommend starting by adding more maple syrup and cinnamon.


  • 1 cup of almond or coconut milk
  • 1/4 cup chia seeds
  • 1 tsp flax seeds
  • 1 tsp blackstrap molasses
  • 1 1/2 tsp maple syrup
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/8 tsp ground cloves


Put everything in a blender and blend until smooth. If you like your chia pudding chunky you can skip the blender and mix everything in a bowl. Pour into 2 small bowls and refrigerate overnight.
