It’s slow cooker time again! I love one pot meals because they are easy to make and require less cleaning. Here are my favourite slow cooker and one pot meal recipes along with some of my notes for modifications and suggestions.
I didn’t add the mint. I suggest doubling this recipe since it only makes 2 servings.
This would also be good with added peas and/or potato.
I just placed everything in the slow cooker. The coconut flour thickened it nicely. For the vegetables I used cauliflower, broccoli, green peas and a sweet potato. It took less than 5hrs to cook on high.
If you have leftovers freeze them in individual servings to enjoy later.
